E’Spuma Lab at POMO
In the past months, the key word that has been an area of interest in the culinary circle is sous vide, referring to the culinary technique that is usually used to achieve premium restaurant dishes.
Such quality dishes are now available at a dining outlet at POMO at a lower price. E’Spuma is Spanish for foam or froth, and is a culinary technique in which an espuma siphon is used to infuse air into food, creating an airily light feel. And E’Spuma Lab uses this to add an interesting new dimension to the texture of natural ingredients that have been pureed, mashed or juiced such as their mashed potatoes.
Sous vide is a culinary technique in which food is cooked in a vacuum at a constant temperature, using a Thermal Circulator. This technique ensures perfectly cooked eggs (without having to use an egg timer), and tender thicker or uneven cuts of meat.
Here’s our take of the dishes we loved together with a few of friends of Simply Beauty:
Sous Vide Eggs with Sautéed Mushrooms or Smoked Norwegian Salmon, $3.80 each, elevates the local breakfast favourite of soft-boiled eggs to new heights with the addition of premium ingredients. Savour the interplay of textures between the perfectly cooked runny eggs, truffle crumble and crispy salmon skin.
Another friend of Simply Beauty Barbara and Wee Ping from Simply Beauty: We love the runny eggs cooked with the special sous vide machine, cooked just right. The mix of both dishes, the mushrooms with eggs, and the salted salmon with runny eggs are simply heavenly.
Wee Ping: I love this soup as it is creamy and thick and the truffles crumbles add to the taste.
E’Spuma Potato Foam, $6.80, is incorporated with curry chicken or beef rending:

I like the Beef Rending with E’Spuma potato foam, $6.80, the best because the mashed potato has a unique texture. It’s smooth and light, but still very tasty, and it complements the Beef Rendang very well.
Wee Ping: The potato is very light and silky
Rich mélange of spices in Fragrant Rice Served with Pan Seared Sous Vide Chicken Breast & E’Spuma Pesto Sauce (You can switch rice with spaghetti), $6.80:
Fragrant Rice served with Cajun Chicken leg and E’Spuma Curry Sauce, $6.80:
Wee Ping’s husband: The fragrant rice is delicious and the raisin in the rice was soft and juicy.
E’Spuma Batter Fish & Chips served with Tartar Remoulade, $6.80, is prepared with crispy batter that gives a satisfying crunch each time you bite into it. The infusion of air into the batter ensures it is lighter and crispier than most regular fish and chips.
(Takeaway) Ideally this dish should be eaten within one hour of being served to enjoy the crispiness of the dish. However, by the time I bought home the dish has become less soggy. However, my food taster at home (my husband) feels that he could tell that the cod was fresh as it didn’t crumble as he bit into it. He also found the batter to be fresh and light, although it’s no longer as crispy as when it was first served.
Durian Fritters, $3.80 for 5 pieces, encases the creamy flesh of premium D24 durians in a similarly crispy, golden espuma batter.
